Jen's Tuna Salad
A healthier spin on a sandwich favorite.

Ingredients:

1 Avocado
1/2 Tomato, diced
Can of Tuna, drained
Garlic Salt
Cayenne Pepper
Lime Juice- Optional

Directions: Peal and pit the avocado.  Smash until smooth using a fork or potato masher. Drain tuna, mix in.  At this point, if you feel the mixture is too dry, add in up to a teaspoon of lime juice.  Add the spices to taste and mix well.  Add tomatoes, stir gently.  Eat plain or spread on bread with lettuce an/or pickles.

Ingredients:
2 tablespoons olive oil
4 8oz salmon fillets
1-4 squash, sliced
2 large red onions, sliced into rings
8 ounces portobello mushrooms
1 tablespoon fresh lemon juice
salt and pepper to taste
1 teaspoon sesame oil

Directions: Preheat the oven to 350 degrees. Coat the bottom of a 9x13 inch baking dish generously with olive oil. Arrange squash slices in a layer on the bottom of the baking dish. Season with a little salt and pepper. Place a layer of onions over the squash seasoning each layer with salt and pepper as desired. Place salmon fillets over the vegetables in the dish, and season with lemon juice, salt and pepper. Place whole mushrooms over the fillets, and drizzle them with sesame oil. Bake for 45 minutes in the preheated oven. Fish should flake easily with a fork, and squash should be tender. I took the onions out, added broccoli and Cayenne pepper.

Chile Garlic Salmon

Ingredients:
1 pound Salmon, cleaned
1/4 cup soy sauce
1 tablespoon chili sauce
1/2 tablespoon chopped fresh ginger root
1 clove garlic, chopped
1 lime, juiced
1 lime, zested
1 tablespoon brown sugar

Directions:
In bowl, combine soy sauce, chili sauce, lime juice and zest, and the brown sugar.  If you wish for a smoother sauce, combine these and the ginger and garlic in a blender and blend until smooth.

Heat a non-stick skillet over medium-high heat with cooking spray coating the bottom.  Spoon some of the sauce into the skillet and place the salmon into the skillet.  Coat the top of the salmon with the rest of the sauce.  Cook for about 3-5 mins each side or until the salmon is done- it should flake easily when pressed by a fork.

Serve with rice and enjoy!
