Honey Glazed Salmon with Cranberries

My husband says to me the night before making this, "I want honey and cranberries on the salmon."  Okay then.  This is what came of it.  
Ingredients:  

  • Salmon fillet
  • 1/2 cup honey
  • 1/2 cup dried cranberries
  • salt and pepper to taste

Directions:
With tin foil, prepare a "boat" to fit on the grill.  If you have a pan that you use on the grill, that could be used instead.  Lightly coat the bottom of the boat with spray oil (Pam).  
If your salmon still has skin on it, put a tablespoon of oil in a skillet on high.  Once the oil is warm, place the fillet SKIN DOWN in the oil for 30 seconds.  Remove from heat and remove the fillet.  Be careful removing the skin- it will be hot.
Place the now skinless fillet in the boat.  Coat with the honey and sprinkle in the cranberries.  
Cook on hot grill for 5 minutes.  Flip and let cook the rest of the way through.  Salmon is done when it is flaky when touched with a fork.
Serve with plain white rice, and pour some of the honey on the rice and salmon for extra flavor.
